My Breakfast Burritos!

OH MY GOD THESE ARE BLOODY AMAZING!

You know those days when all you want is a full English or a dirty Mcdonalds breakfast or just lots of bad food; well these breakfast burritos are brilliant!

  • 1 large wholemeal flour tortilla
  • 2 eggs
  • splash of milk
  • salt and pepper
  • sprinkle of smoked paprika
  • 1/3 of a red bell pepper
  • 2 button mushrooms
  • 1 small white onion/1/2 medium white onion
  • Some sort of meat (bacon, chicken,etc) I used cooked chicken
  • baked beans (I used a few teaspoons from a can I had in the fridge)
  • matchbox size grated white mild cheddar
  • 1 tea spoon Asda 50% less fat garlic soft cheese spread

Preheat your oven to 180ºC (mine was fan assisted). Next, roughly chop your onion, mushrooms and peppers up and put in a frying pan with some Fry Light or water. On a medium heat fry them and add salt and pepper to taste and a sprinkle of smoked paprika. Add your meat to the pan to put some heat through it (or to cook the bacon).

Spread the mushrooms, pepper, onion and meat mixture in your pan out evenly (so you get a good sprinkling of it all throughout your omelette). Crack the eggs into a jug, add a splash of milk, salt and pepper and the teaspoon of Garlic soft cheese. Whisk it up with a fork.  Pour on the egg mixture to make it into an omelette style and cook on a medium heat for a few minutes.

Add your beans to the top and just spread them out (I dolloped mine all over). Grate your mild cheddar and sprinkle on top of the omelette. Put the omelette in the oven (yes while in the pan; make sure your pan is all metal to avoid melty handle bits) for 5  minutes or long enough to cook the egg and melt the cheese on top.

Take out of the oven with oven mitts (I once forgot this and burnt my entire hand because I’m that stupid) and rest for 5-10 minutes until it cools slightly.

Warm your tortilla up for 40 seconds in the microwave. Shake out the omelette onto your tortilla and wrap up in tin foil to avoid spillages while stuffing your face! And there you go! The sexiest most tastiest and healthy breakfast burrito ever!
