My Chicken Stir Fry + Noodles!

So I thought I would share an easy recipe with you for a mid week munch. For those of you who do Slimming World, this is a great after weigh in meal if you want something a bit more substantial without the guilt of a blowout.

It is my own Chicken Stir fry recipe. You will need:

  • Chicken breasts (1 per person)
  • 2 beef Oxo cubes
  • 3 tea spoons Chinese five spice seasoning
  • salt and pepper to taste
  • bag of stir fry veg (can get from Asda or Tesco)
  • chopped mushrooms (because supermarkets never have enough in stir fry’s for me)
  • 3 table spoons light soy sauce (or to taste)
  • 3 teaspoons smoked paprika
  • tea spoon of chili powder
  • 2 teaspoons garlic powder

Right, I tend to cook the chicken in the oven first because I’m paranoid when it comes to cooking chicken in a frying pan. So put your chicken in a tray, preheat oven to about 180ºC and season chicken with garlic and chinese five spice (to your own taste). Spray some Fry Light Olive Oil to avoid sticking and put it in the oven for about 20 mins. After the 20 mins are up, take out your chicken and, if you have a fan assisted oven like I do, turn the tray the other way round and put the chicken back in for another 10-15 mins.

When the chicken is done, take it out and cover it with foil. Get a wok or big frying pan and spray liberally with Fry Light Olive Oil. Turn onto a medium heat and add your mushrooms. Now add 1 beef Oxo cube crumbled up and add half a cup of water. The mushrooms will now broil in the Oxo water. Then add your full bag of stir fry (I used a rainbow stir fry bag from Asda), add salt and pepper to taste, your paprika, soy sauce, chili powder, garlic powder, Chinese five spice and the other Oxo cube and stir in. Add another half cup of water to ensure all the spices mix in well together and then have stir fry on a low heat for about 5-7 minutes, continuously stirring. Chop the chicken into strips and add it to your stir fry and give it a quick stir and then you’re done! Don’t forget to taste your food before you serve because you may want more or less salt or chili depending on your personal tastes.

If you want noodles, I just got a pack of Tesco egg noodles and put them in the frying pan with some soy sauce, Chinese five spice, garlic and chili and flash fried them. If you add a small amount of water, you can avoid using any oil to save on calories/syns.You should be looking for a slightly sticky sauce, not watery that just coats the noodles to give them a bit of bite.

Then serve your noodles and stir fry and enjoy!

NB: Your noodle portion should be about a small cup size, remember it swells when in your stomach so if you still feel hungry, wait 20 minutes after eating and then see if you want more!

The reason behind this recipe is that supermarket sauces are packed full of sugar and calories and just, well, aren’t worth it; especially if you can make your own so easily!

I used Iceland hot and spicy breaded frozen chicken fillets for this stir fry just for a change, give it a go!
