Yes that’s right. I made a cakey substance that is not actually that bad for you. At 93 calories, these little bombs of banana and apple fueled deliciousness are gorgeous!
You can get the recipe here: http://www.nhs.uk/change4life/Pages/meal-planner-recipe-finder.aspx
Just click on Breakfasts (I thought that was odd too) and search for ‘Mini Apple & Banana Muffins’ and then you’re on your way. Now I cannot bake at all but even I managed to make these and they were lovely. Make sure you only make so many though, as you will want to eat them all at once and the scales will not be kind to you if you do!
I made mine with those silicone bun cases you can buy and it helped with the washing up so I’d recommend you get some from Wilkinson’s or somewhere similar.
These are perfect when a granola bar just won’t do and you want to have something that tastes like it’s bad for you. I made mine with Canderel instead of caster sugar and it was gorgeous. I think on the Canderel Jar it says that whatever weight your sugar is, say 50 grams, divide by 10 and that’s what your sweetener weight should be. So it would be 5 grams.
These are a winwin in my book and can be frozen too if need be. Have a go!
