Szechuan Beef-Fakeaway recipe

I made this the other day and it was really easy. Just a note before I go on; the beef needs marinating for half an hour before cooking…

This is my finished result:

Here is the recipe:

  1. 1 tbsp soy sauce
  2. 2 tsp rice wine vinegar or white wine vinegar (I used white wine vinegar)
  3. 1/2 tsp salt
  4. 1 tsp cornflour (I used plain as had no cornflour)
  5. 1 tbsp water
  6. 2 cm root ginger-grated/sliced
  7. 350g beef -cut into chunks (I used braising steak)
  8. fry light/low cal spray
  9. 2 crushed garlic cloves
  10. 1 red chilli -chopped and deseeded
  11. good pinch chinese 5 spice
  12. 1 red pepper cut into chunks
  13. 1 yellow pepper cut into chunks

Mix together 1-6 in a bowl big enough to fit the beef in. Then add the beef and ensure it is all coated in the marinade. Put it in the fridge or a cool place covered for 30 mins. Spray a wok with your low cal spray and add the garlic, chilli, chinese 5 spice and cook for a minute. Add in the beef and stir fry together for about 4 minutes until the meat is browned but not cooked through. Remove the beef and keep it warm but leave in the marinade. In the same wok, add the peppers and stir fry for 3 minutes until slightly softened. Then add the beef back with any bits of marinade and stir fry together. I added extra soy sauce to my taste and added salt and pepper, After trying the beef, I decided that next time I will add some chilli powder too to give it more of a kick.

I served the Szechuan Beef with Slimming World Wedges and Sweet potato wedges (which btw are bloody gorgeous!) and it filled me right up! This is an easy recipe because you can marinade the beef the night before if you like and then it takes less than half an hour to cook it all and serve. This recipe is in the Slimming world fakeaways book but if you search, there are variations on the recipe all over the internet. Try this one out if you are a chinese takeaway fiend; you will love it!
