5 Ways with Overnight Oats

Hi Lovelies!

I’ve been meaning to do this for a while now,and thought what better day to brighten your spirits than first thing on a Monday morning!

I know this doesn’t look pretty but it tasted AWESOME!

I LOVE overnight oats; so much so that I put all kinds of variations together to make for a fab breakfast dessert.

Here are a few of my top Overnight oats breakfasts.

  1. Oats, pineapple,mango, peach, fat free natural yoghurt sweetened with canderel, with a sprinkling of granola on top (This is my summery breakfast)
  2. Oats, sweetened fat free natural yoghurt, orange segments, grapes, apple chunks, (this is what I make when I have ran out of all the other more interesting fruit and don’t have much to work with haha)
  3. Oats, sweetened fat free natural yoghurt, honeydew melon, passion fruit
  4. Oats, sweetened fat free natural yoghurt mixed with a little choc shot, banana, strawberries, with a bit of honey drizzled on top (MY FAVE)

Those are just a few of my faves and yeah they do seem a bit samey, but the basics are the same.

I make my oats in this order: Oats, tablespoon of water, drizzled of yoghurt, all the fruit, more yoghurt, top with dry ingredients, honey or choc shot.

I always use between 35-40grams of porridge oats as that’s the Slimming World recommended amount, so I figure its best to weigh it, rather than play a guessing game. 🙂

If I’m feeling particularly naughty, I’ll use a chocolate yoghurt instead like the Shape one I used here; now that is GORGEOUS!

5 days to go

Hi Lovelies,

I know its been a while and I do apologise but let’s get a move on eh?

I get married in 5 days and cannot believe how stressed I feel. I am trying to do what I can to remain calm but I’m a naturally anxious worrier, so it’s proving difficult.

It doesn’t help that I’ve had a few last minute guest cancellations but hey ho, there we go eh?

So to try and keep calm, I have been listening to meditations for the past week or so, putting lavender oil and spray on my pillow and wrists before bed but am not really sure what else to do.

Most of the stuff is organised so there’s not a lot to do on that side of things so I’d love some tips if anyone who is a natural worrier has gotten married and can give any advice?

My mind is full of ‘what if’ scenarios that if they were to happen, I can’t do anything about it but my mind still thinks up all sorts of weird and wonderful events that could steer the wedding day off course in some way or another.

I’m stopping at my mums the night before, so I know a night away from my bed isn’t the best thing but hoping that a night at my mums (my childhood home) will help keep me calm.

It’s amazing how many problems create themselves when you know you have a day planned out in a certain way.

IMPORTANT NEWS! :D

I have news…It’s pretty big, but I can’t tell you yet because I have to wait…

Don’t ya just hate it when someone does this?

Me to but it’s my news and I have to keep it a secret for just a little bit longer.

I haven’t even told my family. The only two people who know are my best friend Charley and my other half Lee…well Lee accidentally told his mum because he didn’t realise he needed to keep it a secret but that’s ok.

I’m hoping I’ll be able to tell you this week because I’ve had to keep quiet about this for almost 6 weeks and I am NOT GOOD at keeping secrets.

OOOOOO the suspense is killing me!

For now I’ll leave you with a happy Wednesday picture of me with one of my many cuppas and a brand new red blouse with foofy sleeves (completely LOVE by the way)

Ooo before I go, I found these the other day while looking for some paperwork and was absolutely gobsmacked…

I can’t even remember being that big and could not believe what I was seeing. There is a lot of sadness in those eyes and I know more than anyone how hard it is on this journey.

For anyone who’s joined my journey of late, it never gets any easier, I don’t care what anyone says. There is ALWAYS that mental battle going on with food, but it’s about how we respond to it and how we build on it.

Remember, I’m always here if you are struggling or need that extra bit of support. I would appreciate the support too because a lot of people think that it’s just easy for me now I’ve done the hard work. But they don’t see the sweat pouring out of me at the gym, or the amount of times I tell myself no to thoughts of bingeing on crap.

They just see a slimmed down version of Tasha who seems to be flying through this healthy journey.

But it never ends, the journey is always continuing on.

Gym Expense Shocker!

Hi lovelies,

Hope you had a lovely weekend.

I had a bit of an epiphany this weekend (I know, I seem to have a fair few that I talk about on here).

I’ve been wanting to cancel my gym membership for a while as I feel like I’m stuck in a rut with my fitness and haven’t been enjoying it for a while. I’ve been there over 2 years, so I think I’ve done well to keep it up.

So I went yesterday fully intending to cancel; naturally they asked my reasons, so I was honest with them.

I explained that at £38 a month, I feel like I have to do all my exercise at the gym and if I want to try a class somewhere else, I can’t really afford it with my already expensive membership. I said that the classes that I want to do that the gym actually schedules, are always at a time when I’m at work, so I end up on a machine sweating away and not really enjoying it;that’s never a good sign.

She was really lovely to be fair but then also offered me a £29 a month saver rate if I wanted it….

I was shocked and thought about it for a second, then agreed to it as she said it would be for 6 months. But I couldn’t believe that I’ve been paying £38 all this time and all it took was a threat of cancellation and they throw me a £9 a month discount right off the bat!

What really irks me though, is why isn’t my membership that price regardless?!

I’m a loyal member and unless I had asked to cancel, this muggins over here would still be paying £38 a month for as long as they’d let me. They should reward their loyal members in my opinion to allow them to feel valued.

So I’m still at the gym (for another 6 months anyway) but am going to take advantage of their free PT session to show me how to use some of the equipment and also try and fit in some outside classes with the extra £9 outside of the gym.

There’s actually a fab looking clubbercise class that I really want to try, so I’ll let you know how that one goes when I’ve been. 🙂

Slimming World Baked Oats

I can’t believe I haven’t done a blog post about possibly one of my favourite breakfasts ever, Baked Oats.

And they are so simple to make and taste just like a dessert!

But you can mix it up with different flavours of yoghurt, fruit and essence flavourings.

In fact, I have two favourite baked oats variations: one for summer and one for those cold winter months.

My summer one is made with chopped banana, almond essence, nutmeg and choc shot drizzled on top and my winter one is made with diced apple, vanilla essence,cinnamon and natural yoghurt drizzled on top.

Sound yummy don’t they?

There are a MILLION different ways you can do baked oats. I have put chopped walnuts in before, summer fruits, Options hot chocolate if I’m feeling extra naughty; the possibilities are endless!

You just throw it all together and pop it in the oven and that’s it!

I just love baked oats so much; I might even have them for breakfast tomorrow!

Hassleback Potatoes Recipe

This really isn’t a recipe because it’s just so bloody easy!

I made these beautiful little nuggets of loveliness for the first time the other day after my sister in law got me onto them and they are bloody amazing!

They’re called Hassleback Potatoes or if you’re a Yorkshire lass, tatys.

I would use small new potatoes for these, just because they hold in the flavour a lot better. My first go was with bigger tatys and they are nice but little ones are just juicier! 😉

This is how easy it is. All you do is slice your potatoes halfway down and go all the way along the potato (see photo), then spray with frylight (the butter one is brilliant for this), and cover with garlic, salt and chilli seasoning. Then sprinkle with chives and bang in the oven at 180 degrees c for 45 minutes. Take out halfway and spray with more Frylight and add a little more seasoning, then finish off.

Then I take them out of the oven and cover them for about 15 mins, just because it makes them extra juicy!

And that’s it!

I’m big on super easy recipes to add something different to my plate and these definitely hit the mark!

I’ve also experimented with a few other flavours and I bet a paprika version would be lovely!

New Gym Equipment

I walked into my gym the other day after it had been refurbished and immediately got a sense of ‘I don’t belong here anymore’. Why is that?

I pay my £38 a month just like everyone else and yet in my brain, because everything was new and shiny, it instantly made me feel like I should walk out and go elsewhere.

They’ve got these new things called plyosoft boxes and sandbells and all this new stuff that I’ve only ever seen in Instagram videos that only the top buff fitness gurus know how to use.
Now my predicament is, I’d love to give this stuff a go but I have a fear of feeling stupid in case someone tells me I’m doing it wrong.

Now you’re probably thinking, after all this time, I should have conditioned myself not to give a shit what people think and give myself credit that I’m a fast learner.

Well everyone has those demons in their mind that makes them second guess what they should be doing and how they should be doing it.

And I guess I’m not different.

I’m going to task myself to ask a staff member to show me how to use some of the new equipment because;

A. I don’t want to hurt myself

B. I want to learn new fitness routines

I made Broccoli Tots!

My bestie came over a few weeks ago with her little boy Gabriel and told me about this Facebook page called Tasty. It basically has tons of videos of different foods being made in a sped up format. (be warned, it’s also rife with temptation for the naughty stuff like cake and chocolate and uber cheesiness!)

She told me about Broccoli Tots to try and that she had made them for Gabriel; so I thought I’d give them a go too!

It’s a super easy recipe to follow and you can change it up dependant on what view you have. I made mine with broccoli,sweet potato,carrot and parsnip all smooshed together and they are lush!

You cook off your veg then chop/smoosh it up in a bowl. Add salt and pepper, a sprinkle of paprika and any hot sauce you might have (optional), add some breadcrumbs and low fat cheese and an egg. Mix it all together and mould into tot shapes (or croquettes) and bake in the oven for about 20-25 mins on 180 degrees (fan assisted).

Then your tots are ready!

I’m going to make some more but will split up the veg to get different flavours; so I’ll do some carrot and sweet potato and then broccoli and parsnip or whatever takes my fancy really! They almost taste bad for you because of the small amount of cheese in them but you don’t have to add this if you don’t want. You just need the egg to bind it all and the breadcrumbs to hold it together.

They are super moreish too but I give these a 10/10 for how easy they were to make and 9/10 for taste!

Slimming World Chickpea Patties

I made these the other day because I was looking for something savoury to snack on that wasn’t crisps or overly processed.

So I did a bit of Googling and fell upon this recipe: http://www.slimmingworld.co.uk/recipes/chickpea-patties.aspx

One word of warning, if you like a bit more spice, go right ahead and add to your taste. I love my hot and spicy and have to say the amounts in this recipe left a lot to be desired.

I never learn my lesson with Slimming World Recipes because I always have to add more garlic and chilli.

They were quite easy to make and I was rattling away dreaming of tasting them until I read the bit about ‘chill in fridge for 4-5 hours or overnight’….Of course I don’t read the recipes beforehand, what dya take me for??

So I put the mixture in the fridge with serious sadface and leapt on them 2 days later (I forgot it was in the fridge), mixed up the patties, separated into 12 and stuck em in the oven for 35 mins (my oven takes a bit longer to cook).

Got them out and tasted them and although they weren’t as crispy as I’d like (think I used too much potato), they were actually really lovely.

VERDICT: These are perfect when you’re sick of crabsticks and don’t want another bag of Quavers for fear of overdosing; they have a nice bit of spice and last all week to grab and snack. I’ve got a tub in the fridge at work and a tub in the fridge at home, so I’m never without a savoury snack!
